Camera Histogram Examples

I have a Fuji Film S1000 camera and every picture I take in bright light comes in seriously underexposed…?
I recently bought a Fujifilm s1000 camera and it takes great pictures in normal and darker light, but anytime it is bright or outside, the photos come out seriously underexposed. Beach shots, for example, came out perfectly black. As I don’t know a whole lot about shutter speed or whatever, I’ve mainly been experimenting with the auto settings or the beach mode, but it seems strange to me that it seems to over-correct for the brightness. I’ve tried pushing the exposure button and it brings up a histogram but doesn’t actually let me change anything unless I am missing something major.
I have just arrived in Korea and would love to send my family photos, can you help?
If the sun is in your frame it can trick your light meeter. You can use the sunny 16 rule to fix this, Your ISO=shutter speed @F16
In other words if your shooting 400 speed film in sun light you shoot 1/400 @f16 or an equivalent.
